February 2012 Swap

Well here it goes girls I hope everyone is ready to start the meal swap! I am excited to try everyones meals and to not have to cook as much!!! We are meeting at Emily's on friday the 3rd for the swap. We will see you all there!!!!

Emily:
- Baked Potato Soup
- Sloppy Joes

Megan:
- Shepherds Pie
- Sweet Pork & Cilantro Lime Rice for burritos

Tammy:
- Chicken Corn Chowder
- Chili Over Twice Baked Potatoes

Connie:
- Layered Enchilada Bake
- Orange Chicken & Rice

Amanda:
- Ham and Potato Casserole
- Burrito Bake

Alicia:
Sweet & Sour Meatballs with Rice -
Thaw meatballs as directed on the package. Combine sweet & sour/mandarin sauce with meatballs in a 2 quart or larger pot or crockpot until heated through. Cook rice (3 Cups uncooked rice in bag). Serve meatballs over rice!

Chicken Potato Casserole -
Put in the fridge to thaw overnight. Uncover and and bake at 350 degrees for 45-55 min until warmed through and bubbling. Remove and add crushed potato chips. Return to oven for 5-10 min. let cool for 5-10 min and enjoy!
